As I mentioned before, during my studies to become a Nutrition & Lifestyle Coach with the Institute of Health Sciences, I learnt so much about the mineral content of fruit and vegetables and how far off we were as a family in achieving the The Institute for Functional Medicine guidelines.
Since then I have been trying many different ways to pack more non starchy vegetables into our diet. I’m sure like many of you, the good old ‘shroom’ aka the mushroom is a much hated vegetable in your household by your little people. My own sister is known for her mushroom phobia.
Little did I know previously that mushrooms were such a powerhouse of minerals and vitamins and also considered a superfood. They are low in calories, contain a modest amount of fiber and over a dozen minerals and vitamins, including copper, potassium, magnesium, zinc and a number of B vitamins such as folate, riboflavin, niacin, and pantothenic acid.Mushrooms are also high in antioxidants like selenium and glutathione.
So today, sick of the feedback from my little person regarding mushrooms which I have been adding to every meal since learning about their powerhouse status, I decided to pack them into todays balti in disguise with some passata. I will report back if they were noticed and hopefully the puppy in the background won’t breath a word.
